These coffee balls are great if you do not like cooking, this is a no-cook recipe.

Present these in a clear glass cup or mug. Wrap the top part of the cup with beaded wire in your wedding colors secure in place by tying at the handle, curl the ends of the beaded wire and shape as desired. Cut a large piece of cellophane and place inside the cup. Fill the cup with the wedding coffee favors and seal inside the cellophane.

What you will need

    2 cups of crushed shortbread biscuits

    1 ¼ cups of icing sugar (powdered sugar)

    1 cup of finely chopped toasted nuts

    2 tablespoons of cocoa powder

    2 tablespoons of instant coffee powder

    ¾ teaspoons of ground cinnamon

    4 to 5 tablespoons of strong brewed coffee

    ½ cup extra icing sugar (powdered sugar)

Method

  1. Into a large mixing bowl add the crushed cookies, the 1 ¼ cup icing sugar, the chopped nuts, cocoa powder, coffee powder and cinnamon.

  2. Add just enough of the strong brewed coffee to moisten.

  3. Form the mixture into 3cm (1¼ inch) balls.

  4. Roll the balls into the extra icing sugar.

  5. Place onto a sheet of waxed paper and leave the balls to dry (about 1 hour).

  6. These can be stored at room temperature for about 3 days.
