Vanilla Cupcakes
Ingredients for the vanilla cupcakes
150g (5 oz) softened unsalted butter or margarine
150g (5 oz) caster sugar
175g (6oz) self-raising flour
3 eggs
1 teaspoon vanilla essence
Method
- Line a 12 section cupcake tray (muffin pan) with paper cases.
- Place all the ingredients in a mixing bowl and beat with an electric mixer for one or two minutes until it is light and creamy.
- Divide the mixture evenly between the cake cases.
- Bake in a preheated oven, 180°C (350°F), for 18-20 minutes until risen and just firm to the touch.
- Transfer to a wire rack and cool.
- Decorate as desired.
