Vanilla Cupcakes

Ingredients for the vanilla cupcakes

150g (5 oz) softened unsalted butter or margarine

150g (5 oz) caster sugar

175g (6oz) self-raising flour

3 eggs

1 teaspoon vanilla essence

Method

  1. Line a 12 section cupcake tray (muffin pan) with paper cases.

  2. Place all the ingredients in a mixing bowl and beat with an electric mixer for one or two minutes until it is light and creamy.

  3. Divide the mixture evenly between the cake cases.

  4. Bake in a preheated oven, 180°C (350°F), for 18-20 minutes until risen and just firm to the touch.

  5. Transfer to a wire rack and cool.

  6. Decorate as desired.
