Shortbread Cookie Wedding Favor
Makes about 8 to 16 wedges
Shortbread cookies are inexpensive wedding favors and very easy to make. These can be presented on a small clear glass plates. Arrange several pieces on the plate and cover with clear cellophane. Finish of with a wide ribbon long enough to wrap around the plate and the cookies. Tie the ribbon into a bow at the top.
What you will need to make the cookie wedding favor
1 ¼ cups of plain flour (all-purpose flour)
3 tablespoons of sugar
½ cup butter
1 tablespoon dried egg whites
2 tablespoons of water
Caster sugar (fine sanding sugar) for sprinkling
Method
- In a bowl combine the flour and 3 tablespoons of sugar.
- Add the butter and using your finger tips rub the mixture together until it resembles fine crumbs and starts to clings.
- Form the mixture into a ball and knead until it is smooth.
- Roll the dough into a 18cm to 20cm (7inch to 8 inch) circle onto an ungreased baking tray.
- With your finger tips press the edges of the circle to form scallops.
- Cut the circle into 8 or 16 wedges but do not separate.
- Bake in a moderate slow oven (160 C, 325 F, gas mark 3) for about 30 to 35 minutes or until the bottom starts to brown and the center is set.
- Cut the circle into wedges again while it is still warm.
- Cool on the baking tray placed on a wire cake rack.
- Combine the egg white powder and 2 tablespoons water. Bush the tops of the wedges. Sprinkle with the sugar.
- Store in an airtight container at room temperature for up to 3 days or 1 month when frozen.
