Storing and Saving the Cake



Saving the wedding cake, if you wish to go with tradition and keep the top tier of your wedding cake, for your first wedding anniversary or for the christening of your first child. It is important that the cake is stored correctly.

If you have a traditional fruit cake, it is best to store the uncut cake in a large cardboard box and keep it in a cool, dry place. If done correctly the cake can be kept this way for up to two years. Every so often check the cake.

To keep a sponge cake it is best to wrap it carefully and freeze it until the first anniversary. Some bakers recommend that the top tier be frozen for an hour or so before storage (by doing this, it will firm up the icing and make it easier to pack). The most important thing to remember is to have the cake tightly sealed to avoid freezer burn.

Another option that does not require storage is to have a replica made of the cake on your anniversary. This way the cake will be nice and fresh and taste a lot better than one that has been frozen for a year.
