Makes about 10 to 12 servings

Delight your wedding guests with praline crunch, these caramel, crunchy candies make a great gift.

The praline can be chopped more finely by your guests and used to sprinkle on top of fruit salad, ice cream or even used on cakes and brownies.

Present these in paper cones decorated with gold doilies cut to fit the shape of the cone. Store the crunch in a tightly covered container in a cool dry place for up to 3 weeks.


What you need
    3/4 cup of sugar

    2 cups of pecan pieces

    3 tablespoons of butter

    1 teaspoon vanilla

    Pinch of ground cinnamon (optional)
Method

1.  Butter a baking tray or use baking paper on the tray put aside for later use.

2.  Put the sugar in a large skillet. Cook over medium heat, shaking the pan occasionally, until the sugar starts to melt.

3.  Reduce the heat to low and cook until the sugar is golden brown, stir if needed.

4.  Add the pecans, butter and vanilla and cinnamon. If the sugar resolidifies stir over heat to remelt the sugar until the nuts are coated evenly.

5.  Spread this mixture onto the prepared baking tray. Or drop small spoonfuls of the mixture onto the baking tray.  Work quickly as it hardens fast.

6.  Leave to cool completely.

7.  Break into small clusters.

8.  Store in an air tight container.
