Make your own inexpensive homemade wedding favors. Place your unique
wedding messages inside these delicate cookies. Present them in mini
Chinese takeaway containers as a special treat for your wedding guests.
For the best tasting cookies bake these as close to your wedding day as
possible, when cooled store in an airtight container.
What you need
2 egg whites
1/3 cup icing sugar (powdered sugar), sifted
1 teaspoon coconut essence
30g (1 oz) melted butter
1/3 cup plain flour, sifted
1/4cup desiccated coconut which has been toasted

Messages on small slips of paper: An easy way to make the messages for
the cookies is to print your messages onto plain paper using your home
printer. Cut the paper into strips with a hobby knife.
Method
Prepare the fortune messages before you begin.
Preheat the oven to 180 C (350 F).
Grease and lightly flour oven trays, make two
8cm (3 inch) circles on each tray.
In a small bowl beat the egg white using an
electric mixer until
just foamy, gradually beat in the sifted icing, essence and butter.
Stir in the sifted flour and mix until smooth.
Place a level teaspoon of mixture in the center
of each marked
circle on the trays, spread evenly to cover the circles completely,
sprinkle with a little coconut.
Bake, one tray at a time for about 5 minutes or
until lightly brown around the edges, remove from the oven.
Now work quickly, place one prepared slip of
paper on each cookie,
then lift the cookies from the tray, fold in half and lightly bend the
cookies over the rim of a glass cool for 30 seconds. Place the cookies
on a wire rack to cool. Repeat this process for the other cookies.
