Homemade Wedding Favors
Makes 49 homemade almond nougat favors
Almond nougat are homemade wedding favors you can make; and are also a cheap wedding favor idea.
These are best stored at room temperature in an air tight container.
What you need
2 sheets of confectionery rice paper (the ones that are made in Holland, you can find these in specialist food stores). Don't use the Asian rice paper as this is not the same.

1/2 cup honey
1 1/3 cup caster sugar
2 tablespoons water
1 egg white
2 cups of roasted blanched almonds
Sugar thermometer

Method
- Lightly grease a deep 15cm (6 inch) square cake tin. Line the base of the tin with one sheet of the rice paper: cutting the sheet into a 15cm (6 inch).
- Combine the honey, sugar and water in a small saucepan, stir over heat but do not boil until the sugar dissolves.
- Using a pastry brush dipped in hot water, brush down the sides of the pan to dissolve any sugar crystals that have formed, bring to the boil.
- Boil uncovered without stirring for about 10 minutes on until the syrup reaches 164 C (325 F) on the sugar thermometer, immediately remove from the heat. Place the thermometer into a pan of boiling water, remove from the heat and allow the thermometer to gradually cool down.
- Beat the egg white in a small heatproof bowl with an electric mixer until soft peaks are formed. With the mixer still operating gradually add the hot syrup to the egg white in a thin and steady stream.
- Stir in the almonds and spoon into the prepared pan.
- Cut the remaining sheet of rice paper into a 15cm (6 inch) square cover the top of the nougat: pressing lightly onto the nougat.
- Stand for about 2 hours or until cool. Cut into 2 cm (.7 inch) squares.
Now that you have made your almond nut nougat favors you will need to package these nicely to give to your wedding guests. You could place them in clear cellophane bags to keep them nice a fresh and decorate it with a personalized ribbon or label.
